DATE WASTE
Iran is one of the largest date producers in the world, producing about 1 million tons of dates a year. At the same time, about 30% of the total date production is taken out of the economic cycle during harvesting, storage and processing. At present, date waste is often consumed in animal feed, while not using it in human food is a real economic waste because it contains bioactive substances that can be extracted or used to produce new products. The development of the industry of converting date waste into value-added products such as microbial metabolites is a very important help to solve the problem of date waste in the country.
